Citrus Curd

Citrus curd can be made with lemons or limes, oranges or grapefruit, or even ponzu. It's creamy and delicious, and quite adaptable, being equally at home on an English Muffin at breakfast, on a scone for afternoon tea, or in a dessert.


Traditionally, curds are made with lots of butter and egg yolks. I wanted to make a lighter version that retains the texture and citrusy punch of the original, so I eliminated the butter completely, then substituted some whole eggs for most of the yolks.

Citrus Curd

½ cup granulated sugar
citrus zest (optional)
2 whole eggs
1 egg yolk
½ cup freshly-squeezed citrus juice
Begin by whisking together the sugar and zest to prevent the zest from clumping. Then add the eggs and whisk about two minutes, until the mixture is pale yellow and fairly thick.

While whisking, add the juice. Continue whisking vigorously for about a minute until the mixture is frothy.

Prepare an ice bath by partially filling a bowl with ice; the bowl needs to hold your heatproof bowl. Set the bowl with the curd mixture over a pan of simmering water and whisk continuously for five minutes or so until the curd thickens. Be certain not to stop whisking for any reason or you can find yourself with a bowl of sweet, citrusy scrambled eggs.

After about five minutes you should feel the curd thicken rather suddenly. Continue whisking and cooking until the whisk leaves visible tracks in the curd. Transfer the bowl immediately to the ice bath and continue whisking for a couple of moments to stop the cooking.

If you are planning to use the curd right away, cover the bowl with plastic wrap and let it cool in the refrigerator for two hours or so. Otherwise, transfer the curd to an airtight container and refrigerate at least overnight. The curd will keep for about ten days refrigerated.

    Citrus curd sounds easy enough, and I think I would loooooove a grapefruit curd!

  2. Curd is pretty much one of my favorite things ever. Passionfruit, blood orange, grapefruit... makes a killer ice cream as wekk!
